Gluconic acid is a non-volatile organic acid produced in grapes when certain bacteria and mould (especially Botrytis cinerea) cause glucose to oxidise. This simple test is performed with a spectrophotometer to provide an accurate result in real units of grams per litre.
The Vintessential™ Gluconic Acid Test Kit uses an enzymatic method to determine gluconic acid concentrations in wine and grape juice samples.
Gluconate is phosphorylated and subsequently oxidised through a series of enzyme-catalysed reactions. The resulting formation of NADPH is measured spectrophotometrically at 340 nm and is directly proportional to the concentration of gluconic acid present in the sample.
This method provides a valuable indicator of fruit condition and potential fungal infection.
