Malo-lactic fermentation occurs in wine when MLF bacteria convert malic acid to lactic acid. This spectrophotometric assay accurately determines the levels of malic acid, allowing MLF progress to be monitored and ensuring that conversion is complete.
The Vintessential™ L-Malic Acid Test Kit determines malic acid concentrations using enzymatic reactions involving malate dehydrogenase (MDH) and glutamate oxaloacetate transaminase (GOT).
L-malic acid is converted through a series of reactions that generate NADH, which is measured spectrophotometrically at 340 nm. The absorbance measured is directly proportional to the concentration of malic acid present in the sample.
The assay is widely used for monitoring malolactic fermentation progress and completion.
