D-Glucose/D-Fructose 30 Test Kit Instructions. As the main sugars found in grape juice and wine, glucose and fructose can be determined enzymatically by using this spectrophotometric assay.
The Vintessential™ Glucose / Fructose Test Kit determines the concentration of fermentable sugars through a sequence of enzymatic reactions involving hexokinase (HK), glucose-6-phosphate dehydrogenase (G6PDH) and phosphoglucose isomerase (PGI).
Glucose and fructose are converted into measurable reaction products, generating NADPH which is measured spectrophotometrically at 340 nm. The absorbance is directly proportional to the concentration of glucose and fructose present in the sample.
The assay is ideal for monitoring fermentation progress and residual sugar levels.
