Malo-lactic fermentation occurs in wine when MLF bacteria convert malic acid to lactic acid. This spectrophotometric assay accurately determines the levels of malic acid, allowing MLF progress to be monitored and ensuring that conversion is complete.
The Vintessential™ L-Malic Acid Test Kit enables automated monitoring of malic acid concentrations throughout fermentation and maturation. The assay is particularly valuable for tracking malolactic fermentation progress and confirming completion.
L-malic acid is converted through enzymatic reactions involving malate dehydrogenase (MDH) and glutamate oxaloacetate transaminase (GOT), generating NADH which is measured automatically. The absorbance recorded is directly proportional to the concentration of malic acid present in the sample.
